Crayfish
Victorian Southern Rock Lobster (crayfish) is regarded as one of the finest lobsters in the world. The fishermen catch their crayfish from the cold, pristine waters of Bass Strait. The season is closed from mid-September to Mid- November each year to allow for breeding. We’re really excited to be working alongside and supporting the local fisherman of this low impact fishery to provide premium crayfish to our customers.
Oysters
We pride ourselves on sourcing our oysters from a very select network ofAustralia's finest farmers and estuaries. Our Sydney rock oysters come from the far south coast of New South Wales and are available September to March. Our Pacific oysters come from the Eyre Peninsula of South Australia and Tasmania and are available year round. All our oysters are hand graded on the farm.
Mussels
We’re proud to be supplying mussels from our local waters of Port Phillip Bay. Farmed on hanging ropes, the mussels are grown in the nutrient rich cool waters year round.
